These tasty Pancakes were inspired by the Spiced Pear and Walnut Fibre Boost Bar. The macros are easily adjusted by reducing the Oats or dropping 1 of the Eggs out for those people in a reduced calorie phase.

 

Ingredients (2 Servings)

Pancake Batter:

  • Cottage cheese: 250g (1 cup), low-fat
  • Bulk Nutrients Matrix: 30g (1 scoop / 1 serve)
  • Rolled oats: 60g
  • Eggs: 2 large
  • Baking powder: 1 tsp
  • Ground cinnamon: 1½ tsp
  • Vanilla extract: 1 tsp
  • Milk of choice: 1–2 tbsp (if needed to adjust batter thickness)

Toppings:

  • Pear: 1 medium ripe pear, thinly sliced
  • Walnuts: 30g (¼ cup), chopped
  • Butter or cooking spray: For the pan

Quick Prep Reminder

  1. Blend cottage cheese, 30g protein powder, 60g oats, eggs, baking powder, 1 tsp cinnamon, and vanilla until smooth.
  2. Pour onto a low-medium heated pan, press sliced pear directly into the top of each pancake, and dust with remaining cinnamon.
  3. Flip after 3–4 minutes to sear and caramelize the pears directly against the skillet. Top with toasted walnuts to serve.
