Walnut Lentil Salad

Especially during the summer months, this salad is great to have by itself or with a nice piece of fish.

 Ingredients

1 cup (200g) cooked brown lentils, drained weight
1/2 clove garlic, chopped
2 spring onions, sliced
Large Handful English spinach leaves, shredded
80g Reduced fat Fetta
1 cup (180g) cherry tomatoes, halved
15g Walnuts, chopped
98% fat free Italian dressing, to taste

 

Makes 2 Serves

Method

  • Combine all ingredients in a mixing bowl, enjoy
