Easy High-Protein Walnut Lentil Salad Recipe
This salad is great to have by itself or with a nice piece of fish, especially during the warmer summer months.
Ingredients
1 cup (200g) cooked brown lentils, drained weight
2 spring onions, sliced
1/2 clove garlic, chopped
Large Handful Spinach leaves, shredded
80g Reduced fat Fetta
1 cup (180g) cherry tomatoes, halved
15g Walnuts, chopped
98% fat free Italian dressing, to taste
Makes 2 serves
Method
Combine all ingredients in a mixing bowl, enjoy.
