A tasty morning tea snack with a coffee or cup of tea.
Ingredients
- 2 scoops MAGIC NUTRITION Cookie Whey Protein Powder
- 90g coconut flour
- ¼ tsp Stevia
- ¼ tsp baking soda
- 2 tbsp. ABC spread
- 2 egg whites
- 35g serve Queens Sugar-free maple syrup
- ¼ tsp vanilla extract
- ¼ tsp table salt
Method
- Preheat the oven to 180 degrees C.
- Mix dry ingredients together in a medium mixing bowl.
- Add wet ingredients to the dry ingredients and mix to form dough. You may need to add some water to help ingredients stick together.
- Lightly spray a baking sheet with cooking spray or line with parchment paper. Roll the dough into 1-inch balls and place on baking sheet about 2 inches apart.
- Use the back of a fork to flatten the cookies in a crisscross pattern, then sprinkle with sugar and cinnamon.
- Bake cookies for 6-8 minutes until the edges are firm but the centre is still soft. Remove from oven and allow cookies to set as they cool.
- Enjoy immediately or store in an airtight container for up to one week.
